Instant pot Vegan Beet & Rice pudding

Amazing! It was easy to make and tasted so good. Never thought I would like a dessert with beets. You have outdone yourself with this one!

Instant pot Vegan Beet & Rice pudding

Cook the rice & tapioca

Add the washed rice and tapioca along with water and salt to the instant pot and pressure cook it on high. Let the pressure release naturally before opening. 

Make it creamy!

Add in coconut milk and cook this mixture on medium heat. 

Sweeten it

Add in your sweetener of choice and mix everything well to combine. Cook the pudding for about 2 more minutes. 

Add in the beets

Now add in the beet puree and cook it for another 2-3 minutes or until it is heated through. 

Add in flavorings!

Taste and adjust sweetness if desired. Take the pudding off the heat and stir in the ground cardamom.  

Garnish and serve!

Serve the pudding in bowls and top it with pistachios, almonds, pomegranate or any of your favorite toppings before serving.
